González brothers

Antonio González and Francisco Javier González have always been in the restaurant business, after an intense and broad academic education at the International Center of Glion in Switzerland. Since 1997 they have been owners of managers of the very successful restaurant, Los Zagales, in Valladolid.

Antonio worked from 1987 to 1990 as boss of the cold room in El Bulli next to Ferran Adriá and from 1990 to 1994 was in Puerto Rico at the restaurant Reina de España alongside chef Jesús Ramiro.

Javier worked from 1995 to 1997 as boss of desserts and the cold room at the restaurant Akalare (3 Michelin stars) alongside chef Pedro Subijana. Their collaboration was so strong and intense that in 1999, Javier was selected by Pedro Subijana as the most gifted cook-student for the magazine ELLE.

Over the years Antonio and Javier have developed techniques and professionalism of the highest level, with a particular specialisation in pinchos (tapas) of design. Their passion has led to them winning various prizes.

In 2003 they won the Best Warm Pincho in the City of Valladolid (“Mejor Pincho Caliente Ciudad de Valladolid”) and in 2005, they won the Best Native Pincho of the City of Valladolid (“Mejor Pincho Autóctono Ciudad de Valladolid”). 

In 2006 they once again won the Best Warm Pincho in the City of Valladolid (“Mejor Pincho Caliente Ciudadde Valladolid”) and in the same year won the award, Accesit Tapa most cutting-edge (“Accesit Tapa más vanguardista”) at the second national championship of pinchos and tapas.

In January 2007 they won the 4th “Contest of Sandwiches at Madrid Fusion (“IV concurso de Bocadillos de autor Madrid Fusion”) and the same month they won the Pincho of Gold in the City of Valladolid (“Pincho de Oro Ciudad de Valladolid”) and in December of this same tremendous year they won the prize, “Arzak de plata” at the 1st worldwide contest of pintxos in the city of San Sebastian (1º concurso Mundial de Pintxos ciudad de San Sebastian) and the“Gilda de Bronce” in the popular category of this same contest.

In June 2009 they once again won the Pinchoof Gold in the City of Valladolid (“Pincho de Oro Ciudad de Valladolid”). In January 2010 they won the 7th “Contest of Sandwiches at Madrid Fusion (Concurso de Bocadillos de autor Madrid Fusion).These are two highly qualified and ingenious professionals who over time have consolidated and added value to the world of gastronomy.

Since January 2010 they have joined the Chefservices family in order to collaborate with and provide consulting services to those food businesses that look to add an eclectic touch to their products.
